QUICK BITES: Polenta

Have you noticed these little tubes of wonderfulness in the grocery store? Grab one and put it in your cart next time. Here is a quick way to make an impressive appetizer or snack with it...in minutes!

Take a tube of pre cooked polenta, slice it up, and saute' the slices in some butter or olive oil for a few minutes. Make sure you flip them once so they are slightly golden brown on both sides. In the meantime, have your oven preheating to 350 degrees.
Then in a small baking pan, place polenta slices in the bottom, sprinkle with your favorite shredded cheese (I used a Quattro Formaggio mixture of Provolone, Fontina, Parmesan, and Asiago). Then dollop some homemade or store bought pesto onto each polenta round, and place a Kalamata olive (or any black olive you like) on each round as well.

Place in the oven for about 10 or 15 minutes until the cheese is thoroughly melted. Ta da! You now have a fabulous appetizer! Serve on a small plate with a glass of wine and you are GOOD TO GO! Yummers.....

  3. I have used that product before in a pinch. Prefer to make my own polenta, however that stuff is not bad. I found that if it is toasted on a hot griddle, with little to no oil it gets a great crusty outside and stays soft inside.

    I topped them with caramelized onion, pear and gorgonzola.

  4. Great idea for an appetizer - I grew up with polenta, but for some reason rarely use it now. You have given me food for thought!
